Matteo Salas
Born in Italy, Matteo studied Hotel and Restaurant Management and Culinary Arts and Restaurant Management in France, at the Paul Bocuse Institute. He stayed in France for his initial professional training, which saw him work in a series of upscale restaurants, including the 3 Michelin starred “Les Maisons de Bricourt” and “L’Astrance”.

Matteo then moved to Spain, where he gained further experience at “El Poblet” (3 Michelin stars) and “Ristorante Cracco” (2 Michelin stars). After this, he left Europe for Mexico, where his experience culminated in the position of Executive Chef at “Aperi” in San Miguel de Allende, Guanajuato. Under Matteo’s tenure Aperi was awarded Best New Restaurant and Best Hotel Restaurant in the 2015 Gourmet Awards by Travel and Leisure Mexico.

Matteo returned to Europe to become head chef at Roots, where he has found the ideal outlet to pass on his culinary knowledge while also enjoying the freedom to prepare fine cuisine from locally-sourced ingredients.

Samuel Huet
Born in France, Samuel learned his craft at Lycée Hotelier “Hélène Boucher” in Le Mans, and at Lycée Hotelier “Jean Bertin” in Saumur. He then trained professionally in his native country, with a particular focus in the pastry (Pâtissier) discipline. In 1994, Samuel moved to the United States, where he worked at the French Embassy in Washington D.C.

Returning to Europe, Samuel decided to experience one winter season working in the Swiss mountains. Two decades later and he hasn’t left! Having worked for restaurants in Montreux, Sion and Crans-Montana, Samuel joined Les Roches in 2009. As Culinary Instructor in Roots, he is able to share his experience and passion for cooking with students undertaking the Practical Arts element of their BBA program.

Samuel holds a Brevet Fédéral (specialist certification) for both cooking and adult education. He is also professionally certified for his expertise in apprentice training.
