No-one watching the news of the cyclone that battered the Philippines this month can doubt that climate change is a reality, nor ignore the implications it has for the way we do business and use resources.
The Laureate Hospitality Education group takes the issue of sustainability seriously. It is why we have created a new specialization in ‘Sustainability and Innovation’ for the Bachelor of Business Administration in International Hospitality at Les Roches International School of Hotel Management.
And it is befitting, that this year’s Laureate Hospitality Education Award presented at the 2013 EuroCHRIE Hospitality and Tourism Educators Awards gala, recognises two champions of the sustainability cause: Willy Legrand and Philip Sloan both from IUBH School of Business and Management located in Bad Honnef, Bonn, Germany.
Legrand teaches several courses at Bad Honnef, which include sustainability and environmental management in hospitality.
Legrand has an impressive academic career with undergraduate, diploma-level, MBA and PhD degrees from institutions around the world.He regularly travels to international universities in Singapore, Dubai, France and the United States as a guest lecturer, teaching courses on sustainability management in hospitality.
Sloan is a founding member of the lecturing team that launched at the International University of Applied Sciences, Bad Honnef, in September 2000. He attended hotel school at Portsmouth University in the UK and then went on to hold Marketing and General Management positions in London hotels before opening his own specialty restaurants in the south of England and in France. He obtained his Master of Environmental Management and an MBA whilst working as an educational consultant on projects in the Baltic countries at the Council of Europe.
Legrand and Sloan co-authored the textbook: “Sustainability in the Hospitality Industry: Principles of Sustainable Operations” (2009, updated 2012). They co-edited the textbook entitled “Sustainable Hospitality and Tourism as Motors for Development: Case Studies from Developing Regions of the World” 2012. They are currently co-editing a new textbook entitled “Handbook of Sustainable Food, Beverages and Gastronomy” which is set for release in 2014. This latest project is of particular interest due to its inherent multidisciplinary approach which paves the way for deeper understanding of all aspects linked to food and beverage evolution in society.
Through this award, the Laureate Hospitality Education honours educators or trainers for outstanding achievement in contributing innovative ideas, methods or programs to advance teaching, learning or practice in hospitality education or training.
By giving the award to two leaders of sustainable practice, Laureate Hospitality Education is also making a statement about how important it is to protect the environment, and how important sustainable business practices are to the future of hospitality.
